Coriander Paste

Blend all ingredients in a blender, adding a bit of water as necessary to make a paste:

    3 cups chopped coriander leaves (cilantro)
    5 green chiles
    1 teaspoon ground corriander
    1 teaspoon ground cumin
    3 tablespoons lemon juice
    1 clove garlic, chopped
    salt to taste (optional)

This makes about a dozen or two small servings. You should store it in jars in the refrigerator, preferably letting the flavors mingle for a few hours or days before using. It's also fine right away, though.
