Here's my favorite.
Saute onions and garlic in butter and oil until nearly soft. Add vegetables and saute a couple of minutes, then add herbs curry powder, tamari and water or stock. Bring to a boil, add couscous, stir, return to a boil. Cover, lower heat and simmer for 2 minutes. Remove from heat and let sit for 5 minutes. Dot with butter (if desired) and stir with a fork to fluff up.
