French Potato Salad

  • 2 lbs. potatoes (my favorites are small red ones), cut into bite size pieces
  • 1 red onion, chopped
  • 1 bunch fresh coriander or parsley, washed and chopped
  • 1-2 tblsp Dijon or your favorite mustard
  • 2 tsp dried tarragon
  • 2 cloves garlic, minced
  • 4 tblsp good olive oil
  • lots of fresh ground pepper
  • salt to taste
  • 2 tblsp red wine vinegar or balsamic if you want
  • 1/2 cup scallions, minced
  • soy or vegan mayo (or the real stuff - your choice) at least 1/2 cup
  • Boil potatoes until tender. Mix everything else in. Taste and correct seasonings after you chill for a while.

    This dressing works well for pasta salad also. Add cubes of cheddar and fresh tomato as well.
