Garbanzo Basque

  • 1 lb dried Chick Peas
  • 1 medium onion chopped
  • 1 small clove garlic, chopped fine
  • 2 6 oz cans tomato sauce
  • Cook garbanzos (chick peas) till tender ( I use my pressure cooker). Drain. Place thin layer of garbanzos in casserole, add layer of chopped onion and garlic, mixed. Repeat layer ending with garbanzos. Pour tomato sauce over top, bake at 400 for 1 hour.

    Now I found this rather dull, and since we are lacto ovo (tho my son is allergic to cows milk) I added approx. 4 oz Chevre and 2 zuchs finely shredded. This will make it tastier. Omit cheese if its a prob for you.
