Peanut Sauce

Use this sauce to simmer vegetables or pour over noodles.

Yield: 3 cups (lots, this stuff is RICH)

  • 1 cup peanut butter (do not use old fashioned or freshly ground)
  • 1 14.5 ounce can broth
  • 1/4 cup lime juice
  • 3 Tbsp. brown sugar
  • 2 Tbsp. plus 1 tsp. soy sauce
  • 2 Tbsp. chopped peeled fresh ginger
  • 1/2 tsp. dried crushed red pepper
  • Put peanut butter in a medium sauce pan. Gradually mix in broth, then add remaining ingredients. Stir over medium heat until smooth and thick, about six minutes.
