Avocado Pico di Gallo

Here's one of my favorite Southwestern condiments:

  • 2 large tomatoes, seeded and diced
  • 1/2 red onion, diced
  • 1/4 cup olive oil
  • 3 T lime juice
  • minced hot pepper
  • 1/4 cup chopped cilantro
  • salt & pepper to taste
  • one avocado, diced
  • Toss first six ingredients in a bowl. Add salt and pepper to taste. Add avocado just before serving. For the minced hot pepper, I use something from the garden: a few jalapenos or just one habanero. Adjust to your taste. It goes well with chips or as a side condiment to other Southwestern-style entrees.
