Spicy Roasted Red Bell Pepper Hummus

Here's a really interesting recipe from Los Gatos Whole Foods Market.

This hummus can be used as a condiment in place of mayonnaise. It is dairy free, fat free. Serve it chilled with slices of bread; preferably pita breat because of it's mild flavor.

  • 3 lbs. garbanzo Beans - cooked
  • 2 cups garbanzo water
  • 1-1/2 cups lime juice
  • 1/2 cup tahini
  • 1/3 lb. roasted red bell peppers
  • 3 Tbs. roughly chopped yellow onions - carmelized
  • 2 Tbs. minced garlic - carmelized
  • 1/4 cup chopped parsley
  • 1-1/2 Tbs. paprika
  • 1/2 Tbs. cumin
  • 1 tsp. black pepper
  • 1 Tbs. cayenne pepper powder
  • 1/2 Tbs. sea salt
  • Boil the garbanzo beans (chick peas) till very well done. Drain the water, saving 2 cups for later. Place the beans in a food processor. Blend to a smooth consistency, adding the lime juice and tahini a little at a time.

    Add the roasted red peppers, onions, garlic and spices. Check the thickness of the hummus. If it's too thick for it to properly blend, then add garbanzo water. Transfer hummus to a bowl. Mix the chopped parsley in with a wire whisk. Taste and adjust seasoning.

    NOTE: Carmelizing onions and garlic is not necessary. It is only done to add flavor to the hummus.

    P.S. There were *many* typos in the original flyer with this recipe. I suspect the 1/2 Tbs. of sea salt might really be 1/2 tsp. :-)
